This blueberry muffin overnight oats recipe is wholesome, convenient, and tastes just like a delicious muffin! It’s packed with juicy blueberries, plus some warming cinnamon and flavoursome flaxseeds. It’ll satisfy your sweet cravings and makes a healthy alternative to muffins and cakes.

I’m a recent convert to blueberries. Despite knowing how nutritious they are, I’ve just never been a fan of the flavour…

But since my partner LOVES them, I’ve been buying them more regularly. And in an effort to eat more varied fruits and vegetables (30 a week is the goal!) I started throwing them in with my oats.

It turns out they taste pretty delicious when mixed in with oats and spices!

Bowl of oats and blueberries

Unlike other super-sweet fruits, blueberries are subtle. They don’t compete with or overpower the other ingredients which results in a balanced flavour profile. The cinnamon and ground flax seeds finally have their moments to shine!

And this is crucial for the recipe, because it’s the cinnamon and flax that give this its ‘muffin’ flavour. Without them, it’s just plain old blueberry oats. Which is fine in itself, but it’s not the breakfast delight we’re going for here.

Adding a hint of spice and nutty flax is what makes this taste just like a blueberry muffin or cobbler. Except healthier and more filling – yay!
